Menus and Recipes for the New Year

I spent some time over the weekend to find new low fat/low carb recipes on the Internet. One was for Cincinnati Chili, chili over a bowl of spaghetti. Looked interesting. I tried it over my fake pasta - Pasta Slim - while Michael ate it 4 ways with cheddar cheese and onions. It was so different and delicious! Here is the recipe: http://www.genaw.com/lowcarb/cincinnati_turkey_chili.html

After the two week long holiday extravaganza, I am sick of food. I want my simple food back. It began yesterday with this menu:
Breakfast - Low fat string cheese and a bowl of diced veggies with a bit of Trader Joe's Goddess dressing
Lunch - Pizza stuffed Portobello Mushrooms - http://www.genaw.com/lowcarb/portobello_pizza.html
Dinner - One Hot Italian Chicken Sausage and a bowl of shredded cabbage low fat Asian dressing

The total was under 1,200 calories, which is my daily goal for the month. I really would love to lose five pounds. Ten would be better but I just want to focus on five.

Here are the protein/non-starchy veggie recipes for the week for those of us on prednisone:
Mu Shu Pork - http://www.genaw.com/lowcarb/mu_shu_pork.html

Eggplant and Chicken Parmesan - http://www.genaw.com/lowcarb/eggplant_chicken_parmesan.html

Sausage Stuffed Jalapenos - change the recipe to chicken sausage, non-fat cream cheese and no dressing - http://allrecipes.com/recipe/sausage-stuffed-jalapenos/detail.aspx
