Recipes for the Week

Steamy hot. We in the Bay Area are not used to these temperatures and most of us do not have air conditioning. At the meeting in the university hospital last night...no air conditioning. We usually get ours for free. It is called fog. It is expected to return by Tuesday, thank goodness. The roads in and out of town are going to be packed all weekend with pumpkin tourist and people looking for relief from the heat. Sunday, we will be twenty degrees cooler than the other side of the pass. I am staying here at home and working in the garden all weekend.

The pneumonia is gone but I am feeling lazy and sleeping so much. Just can't seem to get enough. Time to kick myself back into gear. Errands today include paying for the wood for the arbor, visiting the butcher, mom has an appointment with the eye doctor and finally a grocery run at Trader Joe's. I have lots of good recipes for next week. Good food. Foods that are healthful for those of us on prednisone. We don't process food correctly. Not our fault. Just the way it is. To stay lean and mean, we can only eat protein and non-starchy vegetables. That's it. Surprisingly, there is plenty to eat. Do a Google search for low carb/low fat recipes for other ideas. Adjust the recipes to low fat or non-fat foods such as cheese, cream cheese, sour cream and mayonnaise. Also, adjust the protein to 3-4 oz servings. So, eat well, exercise and stay away from anyone sneezing or coughing!

Breakfast/Lunch
Arugula Caramelized Onion and Goat Cheese - HERE
Smoked Salmon Deviled Eggs - HERE
Tuna - I just mix it with herbs, sugar free relish and low-fat mayonnaise.

Dinner
Chicken Pizza - HERE - I use turkey pepperoni and no sausage. Will serve it with a vegetable.
Ancho Macho Chili - HERE - Will serve it with cabbage salad.
