Recipes for the Week

Recovering. Still recovering from Saturday night's gala. It was a very quiet Sunday with only a quick run to the grocery store then early to bed. I am feeling better this morning but it will still be a day or so before I am back to normal.

Mom has her first rehab for balance issues around lunchtime today. Beforehand, I am going to try to workout at the other rehab, swing by the butcher's and a very quick run to Trader Joe's. The recipes for this week are:

Bacon Wrapped Scallops with Thai Green Beans:

Five-Spiced Pork with Asian Slaw:

Baked Meatballs over Pasta Slim:

For lunch or breakfast instead of chopped veggies and a low-fat cheese stick or eggs, I plan to make one of these:
Barry's Individual Pizza Crust

Remember, we who are on immune suppressant therapy must watch our carbs. Our pancreases do not process properly so even non-fat Greek yogurt can put weight on us. It is the sugar. Portion size is all important. Keep a balance of protein to veggies. I must stay at 1200 calories to lose weight and 1400 to maintain my weight. Eat well, exercise and take good care of yourself.
